Wir haben einige Pflanzendrinks auf ihre Barista-Eigenschaften untersucht. Welcher Drink schmeckt am besten im Kaffee und welcher l\u00e4sst sich am besten auch zu Hause aufsch\u00e4umen? Als Kaffee-Experten mussten wir diesen Fragen auf den Grund gehen und haben verschiedene Pflanzendrinks getestet, bewertet und einen Sieger gek\u00fcrt.<\/p>\n<p>Die neuen Stars auf dem Teller und in der Tasse sind die pflanzlichen Alternativprodukte. Statt Cappuccino mit Frischmilch bestellen wir Cappuccino mit Soja- oder Haferdrinks im Caf\u00e9. Frischmilch ist bei\u00a0<a href=\"https:\/\/www.aromatico.de\/coffeeworld\/coffee\/kreativ-mit-kaffee-der-barista\">Baristas<\/a>, aber auch zu Hause f\u00fcr\u00a0<a href=\"https:\/\/www.aromatico.de\/kaffee-espresso\/\">Kaffeespezialit\u00e4ten<\/a>\u00a0beliebt, weil sie sich sehr gut aufsch\u00e4umen l\u00e4sst. Zus\u00e4tzlich ist die Variabilit\u00e4t im Fettgehalt der Frischmilch als Geschmackstr\u00e4ger f\u00fcr die Kaffeezubereitung eine verl\u00e4ssliche Gr\u00f6\u00dfe. Damit der perfekte Cappuccino mit Frischmilch gelingt, braucht es \u00dcbung. Die Zubereitung eines Cappuccinos mit einer veganen Milchalternative braucht noch mehr \u00dcbung, denn die Eigenschaften zum Schaumverhalten, der Geschmack und die Harmonie mit Kaffee sind f\u00fcr den Beginner schwer einsch\u00e4tzbar.<\/p>\n<p>F\u00fcr die Zubereitung eines Schaums aus einem Pflanzendrink muss die optimale Menge an Dampf und Schaum gefunden werden. Voraussetzung ist nat\u00fcrlich, dass man eine\u00a0<a href=\"https:\/\/www.aromatico.de\/zubehoer\/espresso-und-kaffeemaschinen\/siebtraegermaschine\/ascaso\/3561\/steel-uno-pid-inox-holz-edelstahl?c=572\">Espresso-Maschine mit Dampfstrahl<\/a>\u00a0besitzt. Der klassische Cappuccino hat etwa 150 ml und setzt sich aus einem Espresso (30 ml) sowie Milch und Milchschaum zu gleichen Teilen zusammen. F\u00fcr den Cappuccino mit einem Pflanzendrink kannst du dieselben Mengen annehmen. Alle Teammitglieder sind erfahren bei der geschmacklichen Bewertung von Kaffee, haben Kaffeeschulungen besucht und verkosten regelm\u00e4\u00dfig Espressi und Kaffees bei uns in der Caff\u00e8 Bar.<\/p>\n<p>F\u00fcr die Produkttests der Pflanzendrinks wollten wir m\u00f6glichst aussagekr\u00e4ftige Testergebnisse erhalten und haben deshalb eine Blindverkostung durchgef\u00fchrt. Wir haben die veganen Milchalternativen hinsichtlich Geruch, Geschmack und Konsistenz getestet und bewertet, ohne dass unser Team wusste, um welchen Pflanzendrink es sich jeweils handelt. Getestet wurden die Drinks jeweils pur und in Kombination mit Kaffee in Form eines Cappuccinos. F\u00fcr die Herstellung des Cappuccinos haben wir das Aufsch\u00e4umverhalten des Pflanzendrinks, die Latte Art F\u00e4higkeit und den Geschmack in Kombination mit Kaffee getestet. In der chemischen Definition sprechen wir von einer Fett-in-Wasser-Emulsion. Milchschaum besteht aus kleinen Bl\u00e4schen die zwei Phasen, eine fl\u00fcssige, also die Milch, und eine gasf\u00f6rmige, die Luft, miteinander verbinden.<\/p>\n<p>Klar, Fett und Wasser lassen sich \u00fcblicherweise nicht miteinander mischen. Milch enth\u00e4lt jedoch nat\u00fcrliche Emulgatoren, die das Fett als feine Tr\u00f6pfchen in der w\u00e4ssrigen L\u00f6sung verteilen. Zu den nat\u00fcrlichen Emulgatoren z\u00e4hlen das Phospholipid Lezithin und das Protein Kappa-Kasein. Sie haben die Eigenschaft, Milchfett zu ummanteln und die fettl\u00f6slichen Kasein-Proteine der Milch zu verteilen. Die Frischmilch wird mit hei\u00dfem Wasserdampf aufgesch\u00e4umt und darf dabei nicht die 65\u00a0Grad Celsius \u00fcberschreiten. Ist nach der Roll- und Ziehphase der perfekte Schaum entstanden, liegt die n\u00e4chste Herausforderung darin, sich mit dem Milchschaum k\u00fcnstlerisch zu bet\u00e4tigen und sch\u00f6ne Muster und Figuren \u2013die\u00a0<a href=\"https:\/\/www.aromatico.de\/coffeeworld\/coffee\/latte-art-die-grosse-kunst-auf-dem-kaffee\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Latte-Art (\u00f6ffnet in neuem Tab)\">Latte-Art<\/a>\u2013 auf den Kaffee zu zaubern. Bei den Alpro Produkten ist zudem darauf geachtet worden, dass der Calciumgehalt dem der Frischmilch entspricht. Frischmilch ist f\u00fcr die Aufnahme von Calcium eine der wichtigsten Quellen zwischen allen Lebensmitteln. In Pflanzendrinks ist Calcium von Natur aus nicht mit den selben Gehalten zu finden, sofern es nicht zus\u00e4tzlich hinzugef\u00fcgt wird.<\/p>\n<p>Wie lange sich ein Schaum auf dem Cappuccino h\u00e4lt, ist auch abh\u00e4ngig von den Inhaltsstoffen, die den Pflanzendrinks zugesetzt werden. Die Standfestigkeit des Schaums der Pflanzendrinks haben wir nicht in die \u00dcbersicht mit aufgenommen, da sie gerade bei den Barista Editionen von Alpro und Oatly das Frischmilchergebnis weit \u00fcbertreffen. In Geschmack, Eigengeruch und Farbe unterscheiden sich unsere veganen Milchalternativen stark von der Frischmilch und auch untereinander. Die Verarbeitungsqualit\u00e4t bei der Schaumherstellung haben wir von\u00a0<a href=\"https:\/\/www.instagram.com\/elitebarista.de\/?hl=de\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Ali unserem Barista (\u00f6ffnet in neuem Tab)\">Ali, unserem Barista<\/a>, nach einem standardisierten Verfahren bewerten lassen.<\/p>\n<p>In unserer Grafik zeigen wir unsere Testparameter f\u00fcr die einzelnen Pflanzendrinks im Vergleich zu pasteurisierter Frischmilch mit einem Fettgehalt von 3,8%.<\/p>\n<p>[\/vc_column_text][vc_single_image image=&#8220;4331&#8243; img_size=&#8220;full&#8220;][vc_custom_heading text=&#8220;Auswertung Pflanzendrinnks im Vergleich zu Frischmilch mit einem Fettgehalt von 3,8%&#8220; font_container=&#8220;tag:h3|text_align:left&#8220; use_theme_fonts=&#8220;yes&#8220;][vc_column_text]<\/p>\n<p>Geschmacklich hat uns im Kaffee die normale Alpro Soya Original + Calcium \u00fcberzeugt. Den besten Schaum hingegen konnten wir mit der Alpro Barista Soya erzielen und den besten Gesamteindruck (Geschmack und Schaum) hatten wir von der Oatly Hafer Barista Edition. Der Mandeldrink ist farblich der Frischmilch am n\u00e4chsten, kann aber im Geruch und geschmacklich durch seine Bitternoten nicht \u00fcberzeugen. Die Schaumbildung ist befriedigend, aber der Cappuccino aufgrund der Bitterkeit nicht harmonisch. Die Dinkeldrink hat uns bei Geruch und Geschmack am wenigsten zugesagt, doch war es m\u00f6glich einen Schaum zu erzeugen.
