This is what lies behind the Omni-Roasting

Traditionally, a distinction is made between three roasting levels: light roast, medium roast and dark roast. The light roasts emphasize the acidity of the beans more, while the dark roasts have a more pronounced body. The roasting of the coffee beans can look quite different in an Omni Roast. The basic idea is to slow down the roasting process and thus reduce the acidity of the coffee, while improving the body and balance at the same time. The challenge is therefore to ensure that the acidity is not too dominant and at the same time the coffee is not extracted too much. In some cases, however, the roasting masters also set the goal of maintaining the same roast profiles. This means that they leave it up to the baristas to create the perfect taste by adjusting the amount of coffee used, brewing time or grind settings.
