The distributor serves as preparation for tamping and will further perfect your coffee experience. After grinding the beans, the distributor is placed on the portafilter and turned clockwise a few times. This gives you a smooth, even surface that now only needs to be compacted by tamping. Spreading the ground coffee with your finger does not achieve this perfect result. In addition, the uniform, smooth distribution reduces the likelihood of unwanted channeling. This is a problem that occurs when the ground coffee in the portafilter has cracks or cavities, or when the surface has an uneven structure.
