The 100% Arabica coffee beans of the Sulawesi Kalossi Toraja are a real rarity. They come from the Toraja region in Sulawesi (formerly Celebes), an Indonesian island between Borneo and New Guinea. The coffee beans are collected in the town of Kalosi and then stored for several years in a tropical, humid climate with good air circulation. The natural fermentation causes the coffee to lose its fruity note and change color. After roasting, the result is a very aromatic coffee with a deep flavor. The sweet notes are reminiscent of maple syrup, the wonderfully spicy notes of lush forest floor with hints of mushrooms, autumn leaves and moss as well as tropical woods.
